The Mississippi Pot Roast is most famously made with beef, but honestly I love it made with pork MORE. Imagine that. Not to mention I prefer the pork version with a packet of onion soup mix as opposed to the au jus packet most Mississippi pot roasts are made with.

This pork roast comes out of the slow cooker absolutely perfect, delicious and tender. The amount of flavor in each bite is impressive and is wonderful meal to come home to. You'll find your family requests it often, especially for Sunday dinner or game day.

A handful of ingredients is all it takes to get this delicious meal on the table.

boneless pork roast – often labeled as a pork loin at the market (not pork tenderloin)

vegetable oil – or any other high temperature oil

pepperoncini peppers and their juice – juice is the brine from the jar

dry ranch dressing mix and dry onion soup mix – flavor boosters

unsalted butter – while you use salted butter, I find this dish is salty enough without it

How To Serve Mississippi Pork Roast

My favorite way to serve this dish right out of the slow cooker is over creamy mashed potatoes, but it also works well over noodles and white rice. If I had to choose one vegetable to serve it with it would be roasted broccoli.

When it comes to leftovers, the possibilities are endless. This slow cooker pork roast makes the best sandwiches or works well filling taco shells and adding all the fixings. There's almost nothing you can't do with it. And even days later, the flavor stands. Make it soon.

  • 3 lb boneless pork roast
  • 1 tbsp vegetable oil
  • 1/4 cup pepperoncini pepper juice
  • 1 packet ranch dressing mix
  • 1 packet onion soup mix
  • 6 tbsps butter, sliced
  • 8 whole pepperoncini peppers
  • Using paper towels, pat your roast dry. Heat oil in a large skillet over medium-high heat. Once the oil is warmed, add pork roast to the pan and sear each side until a nice golden color.

  • Place pork roast into your slow cooker and pour the pepperoncini juice into it.

  • Sprinkle ranch powder and onion powder packets over the pork roast. Place butter slices and pepperoncini on top of the pork roast.

  • 1.      Cover and cook on low for 6 to 8 hours or until the pork roast pulls apart easily with two forks.
